Pork Pot Roast Sandwich with Cranberry-Onion Jam (a.k.a “Ron-Trey Entree”)

Hey everyone,

hope you all had a chance to see me compete on Oprah’s Sandwich Showdown. I was really happy with the result and had a fantastic time cooking with Madeline on the day.  I’ve had many requests for the winning recipes so here they are – enjoy!

PORK POT ROAST SANDWICH WITH CRANBERRY-ONION JAM AND SWEET POTATO CHIPS

Yield: serves 4
Time: 30 minutes

4 parker house rolls
4 slices of Tallegio cheese
1 clove garlic
1 lb boneless pork shoulder
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
1 bay leaf
½ onion, sliced
4 sprigs of thyme
½ cup hard apple cider
½ cup apple juice
2 tablespoons balsamic vinegar

Begin with the pot roast. Cut into 1-inch thick slices and tie with kitchen twine into circular shapes. Season the brown in hot oil in the base of the pressure cooker. Add ½ of the onion, bay leaf, and thyme. Brown for 1 minute then add juice, cider and balsamic. Cover with lid, lock it and pressure cook for 20 minutes until tender.

Cut buns in half. Lay slices of cheese on the top halves and brown under the broiler until crispy and cheese has melted. Toast the bottom halves then rub with a garlic clove.

To assemble lay a slice of the pot roast on the base. Top with cranberry-onion jam (see below) and garnish with a fried sage leaf (see below).

Cranberry-Onion Jam:
½ onion, sliced
3 tablespoons dried cranberries
2 sprigs thyme
3 tablespoons balsamic vinegar
3 tablespoons apple juice
Extra virgin olive oil
Kosher salt and freshly ground black pepper

Heat a sauté pan over medium heat and add a 2-count of olive oil. Add onions and caramelise – about 4-5 minutes. Ad cranberries then thyme and balsamic and juice. Simmer for 10 minutes until the mixture is creamy and the onions and cranberries have just started to fall apart. Season with salt and pepper

SWEET POTATO CHIPS FRIED WITH GARLIC AND SAGE

Yield: serves 2-4

1 head of garlic
1 bunch of sage
2 large sweet potatoes
2 quarts vegetable oil, for deep frying
sea salt

Take a large pot and set over medium heat. Add garlic and sage and bring the oil up to 375 degrees F. As the oil heats up the sage and garlic will infuse the oil. Remove garlic and sage and set aside. Using a mandolin or vegetable peeler shave thin chips out of the sweet potato. Rinse in cold water, drain and fry in oil until crispy. Drain and season with sea salt.

CRANBERRY-APPLE CIDER SHANDY

Yield: serves 4-6
Time: 2 minutes

1 cup cranberry juice
2 cups ice
4 pints hard apple cider
4 sprigs of mint, for garnish

In a food processor or blender combine ice and cranberry juice and process for 2-3 minutes until the mixture tightens up and takes on the texture of a slushy.
Use an ice cream scoop to portion out amongst glasses then top off with chilled hard cider. Garnish with a sprig of mint.

* serve in mason jars for a fun presentation

Hi everyone!

Yes, you’re going to see me on Oprah! I’m just leaving Chicago where I worked on a show that I know you are going to love. Mark your calendars and check your local listings to watch the episode on April 28.

I’ve done a lot of shows over the years and I’ve gotta tell you, this was really special. Oprah is amazing and it’s really exciting to be a part of her show. I can’t tell you too much about what we did, so you’ll just have to tune in on the 28th. But, I promise you that you’ll have a lot of fun watching.

My New Shop

Hi everybody-

Wow…what a month. I’ve been in the kitchen with my team for the past month creating and testing some great new recipes for you to enjoy from my new books that will be coming out this Fall…’Tyler’s Ultimate-Kitchen Handbook’ and ‘Tyler’s Ultimate-Dinner@My Place.’  I can’t wait for them to come out!

But, before we get to that, I wanted to give you the first peek at what my kitchen shop is going to look like.  ‘Tyler Florence-Mill Valley’ will open the first week of June at 59 Throckmorton in Mill Valley and we’re working really hard to create the ultimate kitchen retail spot that you’ll be able to visit and stock your kitchens with everything you’ve ever wanted and then some!  Over the years, I’ve learned a lot about what you like and what makes our kitchens work for us.  So, this shop is going to be all about giving you what you want and need, all in one spot.  From antique chopping blocks to the shiny stainless appliances, we’re going to have all bases covered.  The old, the new and everything in between.

We’re in the middle of construction right now but I thought you might enjoy a look at the architect’s drawing of the shop as it will look in a couple of months.  What do you think?

Point and Shoot

Hi everyone-

For the first time in a while, I am happy to report that I am home in California and staying off the road, at least for a few weeks. But, never fear, I’m hard at work in creating some great new recipes to get to you this Fall in the form of two new cookbooks, Tyler’s Ultimate: Kitchen Handbook and Tyler’s Ultimate: Dinner at My Place. I’m really excited about them and I can’t wait to share them with you. I’m here working with my friend and photographer, Squire, to get some amazing shots of the dishes I’ve come up with. Stay tuned…

On the home front, Hayden is getting bigger everyday. He’s loving his walker and it is truly shocking to me how fast he’s gotten in it. He’s been racing around the entire house playing virtual bumper cars with anything and everything in his way. Between him and Jake ‘Bacon’, you’ve really got to watch your feet around here! He’s had a great time exploring some new flavors during the cookbook shoot as well. Tolan has been pureeing some of the appropriate dishes for him and he’s been loving it. Although, I can tell he’s more of a spaghetti and meatballs guy than a lentil guy!

So, needless to say, we’re pretty busy around here. But I’ll be taking a break next week to cook up some Spanish recipes at the Macy’s Union Square in San Francisco. (6pm in the Cellar). If you can make it, I’d love to see you there! For further information, go to http://www.macys.com.

Flyin’ South

Hi everyone!

Well, I just wrapped up shooting a new season ‘Tyler’s Ultimate’ in New York and as always, I’m excited for the episodes to hit the air so I can hear what you think.   New York was cold…but awesome!  I’ve said it before and I’ll say it again…I love California but there is nothing like a few weeks in Manhattan to get the juices flowing!  From Knicks games to Fashion Week to seeing my friend Adam Duritz and Counting Crows play the Bowery Ballroom, I had a blast.  Plus, we got some great work done to boot.

But, we wrapped last night so its on to the next adventure…as we speak, I am flyin’ south to the South Beach Wine and Food Festival in Miami Beach.  If you haven’t heard, it really is the biggest, baddest food and wine extravaganza in the US.  While I’m there, I’ll be doing some demonstrations, signing some books, cooking some great food and painting the town red with the who’s who of the culinary universe.  Take a look at the website for the schedule of events:
